Ok so what's with the gold and red coins surrounding Cities, farms and forts? Is it a significant part of the game?

Gold is food supply, red is available population to recruit from.

You have the option to disable the coins if you don't like them, it's somewhere in the gameplay options. The same information is displayed if you mouse over any city, but it's shown with progress bars.

The idea behind the coins around the cities was to give a more intuitive feeling about how your resources are distributed. As the poster said this can be turned on and off in the gamplay options screen and is actually off by default now as it proved less necessary when we added supply caps for the final release.
