Ive been quite impressed with the demo so far. What are the differences between the demo and the full game?

Size, scope is probably the biggest:
The demo takes place in a tiny part of the available world: Macedonia. The full game...well, you have the entirety of Greece, north into the Balkans, and east all the way to Turkey.

Freedom is the second biggest:
In the demo, you have a fixed set of missions to complete. In the full game, you can pick and choose where to go, what to do.

There are lots of other things you get to do in the full game, such as learn Trireme tech that lets you explore the sea, etc. LDA can probably give you a better overview than me :)

RC covered most of it.

Scale is definitely the biggest. The demo is roughly only 1% of the map. There are also new units, particularly catapults and triremes, as well as a lot more objectives.

The feel of the gameplay evolves quite bit as well. There are no more boundaries after the demo and you can expand in any direction you wish. You'll also find the enemy starts to push back a lot more - you'll start to get raids and incursions from all sides requiring you to protect your borders a lot more.

Supply starts to become more of a factor as you run into heavily fortified enemy cities and campaign into more isolated parts of the map.

Finally, more expensive mercenaries will start to make up the bulk of your forces (forcing you to prioritize where your elite macedonians are) and you'll need to worry about maintaining garrisons to keep the cities you capture under your control.
