For the mathematics I would say go for "Computer Graphics:Mathematical first steps" by P.A. Egerton. For OpenGL go for one of the reference books "The Red Book","White Book" or "Blue Book". Don't know the title so search for "OpenGL" at Amazon and one of those books will come up.

The Red Book is the "OpenGL Programming Guide", for which the Third Edition just came out. The new version covers OpenGL 1.2, including multi-texturing and 3D texturing.
